Baked Apple Pancake

   Fall.....the time of gorgeous skies, perfect temp's, colorful leaves, and of course all things apple and pumpkin! =) I think it would almost be my favorite season other than the fact that winter is right on its heels.
   I especially love spending more of my days in the kitchen this time of year; there are just so many wonderful things to be made {and eaten ;)}. Here is what I made for breakfast this morning. A perfect start to a cool, fall-ish day.


 Baked Apple Pancake
3 eggs
1/2 cup milk
1/2 cup flour
1 tbsp sugar
1 tsp vanilla
2 tbsp unsalted butter
3 apples, peeled, cored and sliced
1/4 cup brown sugar
powdered sugar for dusting
maple syrup
In a blender {I just used my hand blender} combine eggs, milk, flour, sugar and vanilla. Blend until smooth; set aside.
In a cast iron skillet melt butter. Add sliced apples and brown sugar. Cook on med heat, stirring occasionally for about 10 min or until apples begin to turn golden brown. Remove from heat and pour egg mixture over top. Bake @ 400* for 15-18 minutes or until golden brown and slightly raised. Remove from oven and dust with powdered sugar.
Cut into wedges and serve with maple syrup.

 
   I will definitely be making this again....we really enjoyed it, plus it doesn't take long at all to whip it up. I may add cinnamon and maybe some nutmeg to the egg mixture next time. It couldn't hurt and I think it would add a little something extra to the pancake.

Apple Nachos

   Our small group from church gets together every 2nd and 4th Wednesday of the month and last night was our scheduled meeting. We were supposed to take finger foods for a snack. I had just gotten a bunch of apples and wanted to make something with them. Had seen this idea before, but had forgotten about it. So while searching through recipes trying to decide what to make I came across these again. Decided to give them a shot and I am so glad that I did. They're delicious and not to mention a breeze to put together!! They are also quite easily adapted to your taste or to what you ingredients you happen to have on hand.

Apple Nachos

4 apples, sliced thin
 lemon juice

toppings I used:
 {you can use whatever you like or have on hand}
peanut butter
caramel syrup
flake coconut
chocolate chips
pecans, coarsely chopped
sprinkle of cinnamon

Core and slice the apples thinly. Toss in a small amount of lemon juice to keep from becoming brown.  Arrange on a platter. Melt the peanut butter until it can be drizzled. Drizzle it and the caramel syrup over the apples. Sprinkle with coconut, chocolate chips, pecans and a little cinnamon. Serve.

    Not only are these easy and yummy, they are pretty and healthy too! {well, at least healthier than regular nachos}

Mini Upside Down Apple Gingerbread Cobbler

  Daren was on shift yesterday and I decided to make the guys dessert.....Since it was windy and cold I wanted to make something that could be served warm. After searching for awhile and combining some different ideas I came up with this. 

Mini Upside Down Apple Gingerbread Cobbler
yield: 12 mini cobblers
1/4 cup sugar
2 tbsp oil
1 cup flour
1 egg
1/2 tsp ginger
1/2 tsp baking powder
1/2 cup buttermilk
1/4 tsp nutmeg
1/2 tsp soda
1/4 cup molasses

apple pie filling {I wanted
to use a whole apple ring, but didn't have apples so just used the canned pie filling I made this fall.}

Combine all the ingredients except pie filling and mix well. Grease a muffin tin and spoon some apple pie filling into the bottom of each cup. Pour the batter over top of the apples. Bake in a preheated 350* oven for 15-20 minutes or until toothpick inserted in the center comes out clean. Remove from the oven and loosen the edges with a knife. Turn the tin upside down on a flat surface to remove the cobblers. The apples may not all come out, but you can just spoon them out and onto the gingerbread. Serve warm with whipped cream. {or whipped topping which I used because I didn't have cream.}

  
  The guys really seemed to enjoy it, in fact I think Daren ate three. =) I ate the one I had taken pictures of {had to make sure I was taking them something that would be edible ;)} and it was quite yummy I thought. They were easy peasy to make too....

Apple Pie Cupcakes

  Since going to the orchard on Friday and getting apples I have been trying to use them as much as possible when cooking and baking {as well as just eating them as a snack}. I wanted to try a new recipe at some point and when I saw these cute little guys I knew I had to make them. =)
  With hubby off at work, and the day starting off cloudy and cool again I decided it would be a wonderful morning to do some baking......Of course when I went to make the frosting I didn't have all my ingredients so had to make a quick grocery run while they were cooling.

Apple Pie Cupcakes

 Cupcakes:
yields- 24 cupcakes
  • 3 cups cake flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 1/2 tsp vanilla
  • 1 cup milk
Cream butter and sugar together until fluffy. Beat in eggs one at a time; add vanilla. Mix well. Sift together flour, baking powder and salt. Add alternately with milk, beginning and ending with dry ingredients. Stir just until combined. Pour into paper lined muffin tin and bake @ 350* for 18-22 minutes. Let cool in pan for 2 minutes then remove to wire racks to finish cooling.
Apple Filling : 
  • 2 tbsp butter
  • 2 tsp cinnamon
  • 2 tbsp brown sugar
  • 3 large apples; peeled, cored and diced
In a skillet melt butter then add sugar and cinnamon and cook until bubbly. Add apples and reduce heat. Cook until tender, about 10 minutes. Cool completely. After the cupcakes are cool cut a cone out of the center and spoon in the apple filling. Top with Vanilla Butter Cream Frosting.
Vanilla Butter Cream Frosting:
  • 1/2 cup butter
  • 2 scant cups 10x sugar
  • 1/8 tsp salt
  • 2 tbsp milk
Beat butter a few minutes add sugar and mix together.  Then add vanilla, salt and milk. Beat for about 3 minutes until nice and fluffy.

  I had to try one {of course} and see how they were and oh my goodness!.....sooo yummy and the perfect-sized apple pie. =) I think I may take some into the guys tonight and see what they think of them, but I think they're just great!
