Twice Baked Sweet Potatoes

   What Thanksgiving meal would be complete without sweet potatoes? I love them in any form, but when I saw this idea I knew it would be a favorite.
   I made these as a side dish to serve with the Cornish Game Hens we made for our 'Thanksgiving meal for two.' We also had corn/stuffing balls and gravy. Was planning to make dessert and a salad, but didn't and it was just as well. We were stuffed after this.
   You really should make these soon. Not only are they scrumptious, they are super easy to make too!

Twice Baked Sweet Potatoes
3 large sweet potatoes
4 tbsp packed brown sugar
3 tbsp butter
pinch of salt
1/2 tsp cinnamon
1/2 tsp fresh grated nutmeg
Streusel topping:
3 tbsp flour
1/4 tsp cinnamon
1/4 tsp freshly grated nutmeg
1/8 cup chopped English walnuts
1/8 cup chopped pecans
2 tbsp cold butter
3 tbsp packed brown sugar
Prick sweet potatoes with a fork place in a baking dish and bake at 350* for 30 minutes or until tender when pricked with a fork. Remove from oven and as soon as you can handle them slice the sweet potatoes in half and scoop out the middle and put in a mixing bowl leaving 1/4" of sweet potato on the skin. Mix in butter, brown sugar, salt, cinnamon and nutmeg until smooth. Spoon back into the shells.
In a small bowl mix together streusel ingredients until the butter starts to soften and it becomes course crumbles. Top each sweet potato with streusel and bake at 350* for 20-30 minutes.

Grilled Red Potato Skewers

   I remembered this recipe, that I've been wanting to try, when I was thinking about what to fix as a side dish for the pork chops. Since we have lots of red potatoes from the garden it was a good time to make these. They are also super easy which is an added bonus!
   Thanks to hubby for grilling for me, even though it was a bit drippy outside. It really wasn't the best evening for grilling, but I had already begun preparations when it started raining so I just went with it. Thankfully it had about quit by the time he needed to be outside cooking. Plus the end results were totally worth it! {I'm pretty sure he thought that anyway ;)}

Grilled Red Potato Skewers
6 medium red potatoes, quartered
1/2 cup water
1/2 cup mayonnaise
1/4 cup chicken broth
3 tsp minced fresh oregano
2 tsp minced fresh rosemary
1/2 tsp garlic powder
1/2 tsp onion salt
fresh ground pepper
Place potatoes and water in a microwave safe dish. Cover and microwave on high for 10-12 minutes or until almost tender, stirring once; drain. In a large bowl combine the remaining ingredients, add potatoes. Toss to coat, cover and refrigerate 1 hour.
Thread potatoes onto metal or soaked wooden skewers. Reserve mayo mixture.
Grill flipping once and brushing occasionally with mayo mixture until tender and golden brown.

Satisfy us in the morning
with Your unfailing love,
that we may sing for joy and be glad
all our days.

'Smashed' Potatoes

  If your looking for a simple yet delicious side dish, look no farther. These potatoes, {inspo from The Pioneer Woman } are a new favorite of mine! I made roast beef for dinner the other evening and wanted to make something other than regular ol' mashed potatoes to serve with it. When I saw these little guys I knew they were what was going to be on the table. =)

'Smashed' Potatoes

  small whole potatoes {as many as you need}
olive oil
salt
fresh cracked pepper
fresh or dried herbs to suit your taste {I used dried thyme and rosemary}
sour cream {optional}
fresh chives {to garnish}

Put the potatoes in a kettle and fill with water. Heat to boiling and cook until the potatoes are fork tender.
Meanwhile drizzle a baking sheet with olive oil. When the potatoes are cooked, drain and place onto the sheet. Take a potato masher and smash them until they break open, {don't smash them completely flat} Drizzle with olive oil, sprinkle with salt, pepper and herbs. Bake in a preheated 450* oven for 20-25 minutes or until browned and crispy.
Serve topped with sour cream and fresh chives if you wish. {they are just as good without though}

And what does the Lord require of you?
  To act justly, to love mercy
and to walk humbly with your God.

Happy Monday! =)
