Mint Jelly

   If you have been blessed with an over abundance of fresh mint this summer, here is a great way to use some of it. My Mom would make this jelly and I have always loved it. I've been wanting to make it for several years now and finally got it done this week.

Mint Jelly
{yield: about 6 cups}
  2 cups firmly packed mint leaves
4 1/2 cups water
drop or two of green food coloring (optional)
5 cups sugar
1 box Sure Jell
Wash the mint leaves and finely chop. Place into a saucepan and add water. Bring to a boil. Remove from heat; cover and let stand 10 minutes. Pour through 3 layers of damp cheesecloth into a bowl. Let drip until dripping has stopped. Squeeze gently. 
Measure exact amount of juice into a saucepan. (if needed add up to 1/2 cup water to get exact amount) Add food coloring if desired. Stir in Sure Jell. 
Bring to a full rolling boil on high heat, stirring constantly.
 Stir in sugar quickly. Return to a full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat and skim off any foam. 
Ladle quickly into prepared jars, filling to within 1/8" of tops. Wipe off jar rims and seal. Hot water bath for 5 minutes. Remove jars and place upright on a towel and let cool completely.

    somehow my g-reader doesn't pick up your posts and i've missed some =(... time to see if i can remedy that!
